In 2014 the International Maple Syrup Institute (IMSI) introduced a new set of grading rules to govern how maple syrup is labeled. The one major change is the elimination of Grade B. To some the term “grade B” had a negative connotation, implying that grade B was inferior or a lower quality product. As many of our customers know, grade B has strong bold taste and many prefer it over the lighter grades. There are still 4 grades of syrup with the major change being grade B is now called grade A very dark. We will begin using the grading rules during the summer of 2016.
