Back to school breakfast done right!
In our house the first two weeks back to school are a little like pushing a car uphill. Once you get over the top, the car starts rolling and the momentum will carry you all the way to Christmas. Starting the day off right can be a real challenge, a piece of toast or Lucky Charms won’t cut it to get those brain gears rolling. Kids (myself included) need something substantial to fuel those hardworking minds and busy schedules. Try this easy, nutritious, protein packed recipe made with pure maple syrup and honey (btw it tastes great)!

Prep Time: 15min
Ingredients:
4 c old-fashioned oats
1 cup craisins, raisins, dried cherries, etc
1 c shredded unsweetened coconut
1/2 c sesame seeds
1/2 c sunflower seeds
1 1/2 c coarsely chopped nuts (we like almonds and pecans)
6 T coconut oil
2 T honey
6 T maple syrup
1 t cinnamon
1/2 t salt

Mix dry ingredients in a large bowl. Combine maple syrup, honey, and coconut oil in a pan and heat to a simmer. Pour over oat mixture and stir well with wooden spoon. Spread evenly on large baking sheet.
Roast at 325*F for 30 – 40 min, stirring occasionally, until golden brown. Stir in dried fruit. Let cool and store in air tight container. Makes about 8 cups.

Be creative with your mix of grains, add wheat germ or bran in place of the seeds. Play with spices and the dried fruit additions. Just keep the volume of dry ingredients approximately the same for each batch.

*For even more protein serve over 1 cup Greek yogurt.
